Hot Eggnog

Makes 6 drinks

Ingredients

4 egg yolks

1/4 cup sugar

2 cups milk

1/2 cup sweet sherry

1 tsp vanilla extract

Preparation

Whisk the egg yolks and sugar until pale and thick.

Heat the milk until small bubbles form around the edges. Gradually whisk the hot milk into the egg yolks. Pour the mixture into a clean saucepan and cook over a medium-low heat, stirring constantly until the mixture thickens slightly, 5 to 7 minutes.

Remove from heat and stir in sherry and vanilla. Strain and serve.
