It’s Cinco de Mayo, Cheers!

Happy Cinco de Mayo! Here’s a delicious and refreshing cocktail to toast the day to, a Prickly Pear Margarita. All you need are some chips, guacamole, margarita glasses, salt and some good friends to start the party! Here’s the recipe

Makes: 7 cups; 8 servings

Ingredients

1 1/4 pounds green or red prickly pear fruit

1 cup lime juice

1 cup tequila

3/4 cup orange-flavor liqueur

2 tablespoons sugar

4 cups crushed ice

Thin lime slices (optional)

Preparation

1. Cut ends from prickly pears. Cut a 1/8-inch-deep lengthwise slit through peel on each fruit. Pull back peel and remove from pulp; discard peel. Cut fruit pulp into 1/2-inch chunks.

2. In a blender, combine half of all these ingredients: prickly pear chunks, lime juice, tequila, orange liqueur, and sugar; whirl until smooth. Add half the ice and whirl until blended. Pour into glasses slowly, leaving seeds behind. Discard seeds.

3. Repeat step 2 with remaining pear chunks, lime juice, tequila, liqueur, sugar, and ice.

4. Garnish with lime slices.

Cinco de Mayo: Sweet & Refreshing


Tomorrow, which is the  fifth of May is Cinco de Mayo and we have some delish sweet and refreshing margarita treats for you to celebrate with. If you don’t want to go all out with a full course menu break out the chips and salsa and spurge on the cocktails and desserts! I mean how cute and tasty do these Watermelon frozen pops look?

We will start off with the Classic Margarita, which by the way you can never go wrong with a classic lime Margarita frozen or on the rocks.

Ahh, Margarita pops! What cool way to enjoy a frozen pop. When you serve up these Margarita Ice Pops at your Cinco de Mayo gathering, everyone will love them. Also these frozen treats go great Mexican beer.

When you mix up a batch of the Watermelon Margarita’s you better mix up more than one, these sooo sweet and refreshing.

I found these yummy Margarita Cupcakes over at the Recipe Girl. These cupcakes are fun for an adult Cinco de Mayo party, they do have a bit of tequila in them, and  so it’s probably best to keep them away from the little ones. For a dessert that is kid friendly try the Frozen Cinco de Mayo dessert for an easy and light sweet treat. This will be a hit with all the kid.

To round it all at we have these fabulous and yummy Watermelon Margarita Pops. Serve to your guest with a small bowl of margarita salt. These uberfrozen marg pops are tangy and delicious.

Pretty Delicious: Spring Earth Day Cake

How cute is this cake? Celebrate Earth Day with these delicious Spring Daisy Cake. It’s easy to make and will bring many smiles to your dessert table.

Here’s the recipe:

Ingredients

* 1/2 1 lb (8 oz) box prepared white fondant

* Gel-paste food coloring

* Cornstarch

* 2 8-inch round cake layers (your favorite yellow cake recipe)

* 1 recipe Fluffy Vanilla Frosting, below

Preparation:

1. Divide fondant in half and knead yellow coloring into one half, using a light dusting of cornstarch to prevent sticking. Working with one color at a time, roll both white and yellow fondants into thin sheets, about 1/8 inch thick. Cut out small flowers. (Daisy cookie cutter from winbeckler)

2. Knead scraps together to soften and make small balls; moisten with water and press a ball into the center of each flower. Dry flowers overnight on a wire rack to give them shape. Note: While working with one piece of fondant, you should always keep the other piece covered to prevent it from drying out.

3. Trim domed tops from cakes and place one cake on a serving platter. Color 2 cups frosting dark green and the remaining frosting light green. Cover cake layer on platter with light green frosting about an inch thick, then top with second cake. Ice entire cake with light green frosting. Use extra frosting in a piping bag with a #5 plain tip t create a border on the bottom edge.

4. Use dark green icing in a piping bag with a #10 or #12 plain tip to pipe grass points on the top of the entire cake. Top with fondant flowers. Makes 10 servings.

Fluffy Vanilla Frosting:Beat 2 cups unsalted butter, softened, until creamy, about 2 min. Add 6 cups sifted confectioners’ sugar, 1/2 cup at a time, mixing well and scraping down sides of bowl. Beat in 1 tsp vanilla and a pinch of salt; stir until smooth. Makes 5 cups.

Today is the Earth Day, it’s the actually the 40th anniversary of Earth Day.  Today we inspire awareness and rise our conscience levels  to be more in tune and involved on what is happening to our plant Earth.  It is our responsibility to sustain and to take care of the Earth’s environment.  So on today we will appreciate and celebrate all things that are good for plant Earth.
